MOI Production process for red and yellow onion extract almost ready for market

The biorefinery process for outer scales of onions from Mol Fresh Food BV in Putten is almost ready for the market.

During the next few months the process will be fine tuned to produce a yellow or red protein extract as well a dietary fibres to be used by the food industry. The powdered extracts have a pleasant onion flavour while the fibres can be processed in all kind of food such a bread or meat. In addition the extracts do have umami effect, caused by natural ingredients, that can be used by the food industry to reduce the amount of added salt (or sugars). The fibres also have very high water absorption properties. The products will be marketed by the new company Mol Onion Ingredients BV (MOI) by mid 2017.
